I think I might be over complicating things. From what I can see you are inserting the actual windsurfing insert from the side of the mast then laying-up over that and then drilling up into the insert using a drill press or similar?
Was thinking of using two standard snowboard insert to attach mast to fuselage? Same method I use for my binding inserts on traditional Kiteboard. Made a sectional for you below to yes if it would be viable option as I already have the inserts Windsurfing inserts will be hard to find in this Country. Attaching Foils to fuselage would be the same method but easier to do as they would be closer to the shell and only require some counter sinking.

Pensait l'aide de deux insert de planche à neige qui consiste à fixer le mât au fuselage? Même méthode que j'utilise pour mes inserts de fixation sur Kiteboard traditionnelle. Fait une coupe pour vous ci-dessous pour oui si il serait option viable, car j'ai déjà les inserts de planche à voile inserts sera difficile de trouver dans ce pays. Fixation Feuilles au fuselage serait la même méthode, mais plus facile à faire comme ils le seraient plus proche de la coquille et ne nécessitent un certain naufrage contre.
